Dâu tây rửa sạch, cắt bỏ cuống, cắt lát vừa ăn. Trộn đường vào chén dâu tây, để khoảng 10 phút.
Cho dâu tây vào máy sinh tố xay nhuyễn với một muỗng canh sữa tươi.
Dùng dụng cụ lọc bỏ bã, giữ lại phần dâu tây đã xay nhuyễn. Múc ra chén riêng 3 muỗng canh dâu tây đã xay để dành làm phần thạch trên bề mặt, phần còn lại cho vào nồi, đun sôi nhẹ.
Gelatin bột cho vào chén nhỏ, thêm một ít nước ấm, hòa cho tan. Cho chén gelatin vào nồi dâu tây đã đun, dùng muôi khuấy nhẹ để gelatin tan hoàn toàn, nhấc nồi ra khỏi bếp, để nguội.
Kem sữa tươi cho vào thau sạch, dùng máy đánh trứng đánh bông nhẹ.
Nồi dâu tây đã trộn gelatin sau khi nguội thì trộn phần kem sữa tươi vào, dùng muôi trộn đều thành hỗn hợp đồng nhất.
Miếng bánh bông lan xẻ làm 3 phần hay 2 phần tùy thích.
Xếp một bạt bánh vào đáy khuôn, xung quanh bạn lót một lớp nhựa mỏng để có thể dễ dàng lấy ra.
Đổ một lớp mỏng phần mousse dâu lên bề mặt bánh, tiếp theo đó lót một lớp bánh bông lan, rồi đến một lớp mousse, làm tiếp tục cho hết phần bánh và phần mousse. Cho ổ bánh vào tủ lạnh, để 5-6 tiếng để bề mặt mousse đông cứng lại.
Phần thạch trên bề mặt: dùng 3 muỗng canh để dành ở trên và hòa với 50-60 ml nước lọc cho vào nồi nhỏ đun sôi. Gelatin cho ra chén thêm vào một ít nước ấm, hòa cho tan nhẹ thì đổ gelatin vào nồi thạch đã đun, khuấy nhẹ tay để gelatin tan đều, để nguội.
Phần thạch sau khi nguội thì để phần mousse dâu tây ở bước 10 đông cứng, nhẹ nhàng đổ lên bề mặt dâu tây, tiếp tục để vào tủ lạnh khoảng 3-4 tiếng đến khi phần thạch đông cứng hẳn.
Phần bánh sau khi đông lấy ra khỏi khuôn, gỡ bỏ phần lớp nhựa lót xung quanh, trang trí tùy thích, và bánh sau khi trang trí phải được giữ lạnh trước khi đem ra dùng.
