Khoai lang kén chiên giòn là món bánh ăn vặt được nhiều ưa thích. Khoai bùi bùi, được bao kín trong lớp bột chiên chín giòn béo hấp dẫn. Món này có thể dùng cho ăn sáng hay ăn các bữa ăn nhẹ đều được.
Khoai lang gọt vỏ, cắt nhỏ đem hấp hoặc luộc chín. Sau đó, cho khoai ra tô dùng muỗng nghiền nhuyễn. Tiếp đến, trộn thêm vào 20g bột năng và 2 muỗng canh đường, chút nước cốt dừa cho khoai thơm ngậy và trộn đều thành khối mịn.
Nặn vê khoai thành những miếng nhỏ dài cỡ ngón tay cái. Tiếp đó lăn từng viên khoai qua lớp bột năng, lăn cho lớp bột năng bám đều vào viên khoai là được. Pha bột chiên giòn với nước lọc sao cho hỗn hợp thu được sền sệt không quá loãng.
Đun nóng già nhiều dầu ăn. Sau đó nhúng từng viên khoai cho áo đều hỗn hợp bột chiên giòn, rồi thả vào chiên ngập dầu cho đến khi chín vàng giòn thì vớt ra để ráo dầu là có thể dùng. Khoai tây kén dùng nóng lớp vỏ còn giòn là ngon nhất nhé! Để lâu dễ bị ỉu mềm đó!
