Thay vì ăn xôi gà theo cách truyền thống, ngày Tết bạn có thể biến tấu với cách chế biến này. Món xôi gà sẽ có hương vị mới lạ mà cách trình bày cũng hút mắt hơn hẳn cho mâm cổ Tết.
Đùi gà rút xương, dùng búa đập mỏng miếng thịt, vừa giúp miếng gà trải rộng đồng thời dễ cuốn hơn. Ướp thịt gà với 1/8 muỗng cà phê muối, hạt tiêu sọ và rượu nấu trong 20 phút cho thấm. Xới xôi ra chén cho nguội bớt, chờ chế biến.
Cà rốt gọt vỏ rửa sạch, băm nhỏ. Làm nóng chảo với 1 muỗng cà phê dầu, cho cà rốt vào xào trong 1 phút cho chín. Trút xôi vào, nêm nước tương, đường, 1/8 muỗng cà phê muối, đảo đều khoảng 2 phút cho gia vị thấm đều rồi tắt bếp. Trút xôi ra chén, để riêng.
Trải tấm giấy bạc ra mặt bàn, rắc một ít bột mì lên trên mặt. Tiếp đó trải miếng thịt gà vào giữa tấm giấy bạc. Đổ một lớp xôi vào giữa miếng thịt gà. Nhấc mép thịt gà và từ từ cuộn tròn lại. Sau đó mới cuốn mép giấy bạc bọc lấy miếng thịt gà. Sau khi cuốn, túm chặt hai đầu cuốn gà, xoắn lại.
Làm tương tự với cuộn gà còn lại. Kế tiếp đặt hai cuộn gà vào nồi hấp, khi nước trong nồi hấp sôi chừng 1 đến 2 phút thì hạ nhỏ lửa đun liu riu. Hấp khoảng 20 phút hoặc đến khi thịt gà chín đều. (thời gian hấp tùy thuộc độ dày mỏng của cuốn gà).
Lấy thịt gà ra khỏi giấy bạc. Làm nóng chảo bằng 1 muỗng cà phê dầu ăn rồi cho thịt gà vào áp chảo cho đến khi vỏ ngoài có màu cánh gián đẹp mắt thì tắt bếp.
Gắp thịt gà ra thớt, thái khoanh, xếp ra đĩa dài, dùng nóng.
